This is one of my favourite meals that Tim cooks. Because I am a chili phobe, this recipe does not use chili (which is usually used in a traditional Putansca sauce). This recipe will last 3 meals for two people OR it will last one meal for 6 to 8 people. We usually make a batch of it and then have it for dinner the next night (and lunch the next day :) ).

2 tins of anchovies – approximately 90g
2 jars of store bought pasta sauce (approximately 1.5kg)
A handful of Kalimata olives (sliced and pitted)
6 or 7 button mushrooms (sliced)
1 heaped teaspoon of garlic (you can use crushed garlic from a jar or you can use two large cloves of fresh garlic)
4 or 5 sprigs of parsley (chopped)

First of all, put the anchovies into a large saucepan and fry them off. A natural oil will come out of the anchovies. You do not need to add any cooking oil to this recipe.

Then add the garlic and fry it off until it is slightly brown.

Once the anchovies have melted down and the garlic is browned off, add the pasta sauce, olives and mushrooms.

Leave the mixture to simmer while the pasta is cooking.
